Orzo Pasta and Spinach Salad Knock Off

Busch's Fresh Food Market makes an absolutely divine deli counter salad that I get frequent cravings for. Usually it's easy to get my fix, but the last few times we were there they didn't have any made up. I am going through serious withdrawal, so I had to figure out how to make an acceptable facsimile stat.

It's really a simple seeming dish with orzo pasta, baby spinach, feta cheese, grape tomatos, olives, and an oil and vinegar type dressing. I always pick out the olives because I most definitely do not ♥ olives, yuck! Which always annoys Brad, because it's priced by the pound and he hates throwing away money as he sees it. So it's really a good thing I'm experimenting, less waste.

While not exactly the same, as you can tell by the picture we didn't have orzo pasta in the pantry so I substituted another small pasta shape, it's close enough for me. I had a really ripe avocado in the crisper bin so I added some of that in along with some red onion and just threw on olive oil and red wine vinegar until it looked moist enough. I've been eating it by the bowlful! What are you craving these days?

  2. I love finding copy cats recipes like this! But I love, love, LOVE olives, so I would add those too. :-) Emily and Clara love them too!! I bet Emily would love this salad, so I'm going to make it for lunch this week. Yum!
