Organic Raspberry Freezer Jam

Last week we went see my friend Melissa and her husband Tim at their new house. We wanted to take them a little something and I had just the thing! Some delicious raspberry freezer jam. It's so yummy and tastes just like fresh raspberries!
I used a cute kit from Lindsey Riches, called Berry Delightful to create the jar topper and tag. It as perfect for this and you know, it's all about the presentation:)
I am so glad my friend Rachel invited me and ER to go raspberry picking last September. I had no idea you could pick raspberries so late in the season. The day we went was beautiful, sunny with a little breeze blowing while we picked. We took a lunch and had a great afternoon.The bushes were just full of big juicy berries and we had no trouble filling several containers. ER really liked helping. We had so many berries, I knew we'd have to do something other than just eat them. I was planning on trying a few recipes but after making our first batch of jam...we just had to make more! It's so good and so easy, if you've never tried, you really should! It was the first time I've ever tried making anything like this. So I recruited my mom to help me.

All you really need is a box of pectin, it's sold right by the canning jars...which you also need, sugar, and fruit. Just follow the directions in the package of pectin. My freezer is still full of yummy jam! It's good for a year after making it and when you want some, you just pop it into the fridge and let it defrost overnight. You've got to eat it up within a month of defrosting, but it's so delicious that won't be a problem! Having it on your toast, or as I really love it...heated slightly and over vanilla ice cream...it's like having a bit of summer long after the temps have dipped down.
Here's how I packaged everything up for Melissa and Tim. I also got them my favorite towels from Williams Sonoma, hamburger seasoning mix, and other goodies because I wanted to make sure there was something manly for Tim in it. We gave it to them all wrapped up in cellophane with a bow.
